Shredded Buffalo Chicken Salad

Salad season is wrapping up soon, so you bet your bottom dollar I'm squeezing in as many micronutrients as possible! We know that protein is the basis of my meals, but I love to be able to make a large amount of protein at the beginning of the week and use it in different bowls; it helps prevent me from getting bored.

Make your shredded chicken in advance and customize veggies to your liking for this delicious buffalo chicken salad!  

Makes: 1 serving

Ingredients:

  • 4 oz. plain shredded chicken

  • 1 tbsp. Light cream cheese

  • 3 tbsp. buffalo sauce

  • 1/4 tsp. garlic powder

  • 1 head of romaine lettuce

  • 50g chopped red onion

  • 2 celery stalks, chopped

  • 5-6 cherry tomatoes

  • 30g avocado

  • 1 jalapeno, diced

  • 2 tbsp. light ranch dressing such as Bolthouse Farms

Directions:

  1. Mix chicken, cream cheese, garlic powder, and buffalo sauce in a small bowl.

  2. Assemble salad by chopping romaine and tossing it in a large salad bowl. Add diced tomatoes, celery, red onion, and jalapeño, and a top with chicken mixture.

  3. Drizzle with ranch and add additional toppings, such as if macros allow (recommend bacon and cheese!)
