Creamy Chipotle Chicken Pasta

Ingredients:

16oz boneless, skinless chicken breast, 1 cup Greek yogurt, 1/4 cup grated parmesan, 1/2 cup tomato sauce, 2 chipotle peppers in adobo sauce, 1 clove garlic, 1/2 cup unsweetened almond milk, 6oz whole wheat pasta, 1 tbsp light butter, Garlic powder, salt, and black pepper to taste. Optional: Chopped green onions or cilantro for garnish

- Sauce:

Blend the Greek yogurt, parmesan, tomato sauce, chipotle peppers, garlic and almond milk in a mixer till smooth.

- Cut Chicken into 1 inch cubes, season with garlic powder and salt and pepper

- Cook chicken on medium heat, them mix in light butter until fully cooked 

- Cook your whole wheat pasta, then drain 

- Pour Chipotle Saucer over Pasta and stir until well coated

- Top with Chicken, garnishing with chopped green onions and cilantro.
