Loaded Smash Burger Tacos
Servings: 4
1 lb 93% Extra Lean Ground Beef
Salt/Pepper to taste
1 tsp garlic powder
4 tsp. Dijon Mustard
1 c. onion
1 T. Butter
Lettuce
Diced tomatoes
Fat Free Thousand Island
4 Small Low Carb Tortillas of choice (I used La Banderita Snack Size)
Sliced Cheddar (optional- not included in macros)
Melt 1 T. of butter in skillet. Add diced onion and saute until brown and carmelized. Divide into 4 servings. Combine ground beef, salt/pepper, and garlic powder. Form into 4 patties (4 oz each). Place a piece of wax paper on counter. Press and smash patty in thinly between hands. Place on wax paper.
Take tortilla and press down on top of patty. Turn tortilla back over with meat facing the top. Spread 1 tsp. dijon mustard on top of each patty. Place face down in hot skillet, pressing down with spatula. Flip. Cook until no longer pink.
Add cheese on top if desired, cover with lid until melted. Remove from skillet. Add lettuce, diced tomatoes (¹/⁴ c. per serving), caramelized onion (divided into 4ths) and fat free thousand island (1 T per serving).
