Egg White Frittata

I'm drooooooling as I write this.  I don't know if any one else feels this way, but I go through phases with eggs.  Sometimes, I crave them and can't wait to eat them every morning... and other times, I literally can't.  

When I'm in an pro-egg phase, this recipe is so delicious and makes me feel amazing.  With all clean ingredients and no gluten to be found, this is a must-try.

 

Servings: 1

Ingredients:

  • 1tsp oil

  • 1 tsp crushed garlic

  • 184g egg whites

  • 1/2 small zucchini, chopped

  • chopped tomatoes

  • salt and pepper to taste

  • hot sauce (optional)

 

Directions:

  1. In a skillet over medium heat, warm olive oil and cook crushed garlic (continually stir as not to burn).

  2. Add Zucchini and tomatoes and cook until softened (3 minutes).

  3. Pour in egg whites and cook for 3 minutes on one side, then flip for 1 minute watching closely as not to burn.

  4. Season to your liking with salt and pepper! I add hot sauce too!
