Let the busy fall post-school, pre-sports nights commence! My favorite way to stack on track during busy weeks is to prepare a protein for the week and mix up different bowls, introducing the protein fiesta bowl!
This bowl is packed with savory, spicy flavors and is completely customizable.

Ingredients:

Four oz. Cooked lean ground beef

1 Joesph’s pita
-
50g frozen corn
-
60g black beans
-
1 tsp. Taco seasoning.

25g avocado
-
One jalapeno
-
1/4 cup fresh pico de gallo
-
One head of romaine lettuce
Directions:

Preheat the oven to 400 degrees.

Slice pita into long, thin “tortilla” strips using a pizza cutter.

Place on a baking sheet and sprinkle 1 tsp taco seasoning over the top.

Bake for 7-8 minutes or until the tortilla begins to brown.

Remove and set aside to cool.

Assemble the bowl by chopping romaine and adding corn, black beans, pico de gallo, ground beef, and avocado.

Top with tortilla strips and serve with Bolthouse farms cilantro ranch!
