For all of my snackers, you’ve got to try these macro-friendly Cracker Jacks! This is a simple snack that’s *warning* quite addicting! It’s a combination of our Vanilla Creme protein powder, Walden Farms Caramel, peanuts, and popcorn. That’s it! And at only 136 calories per cup, it’s perfect for movie night, road trips, or beating a 2 o’clock slump.
Makes about 8 cups
MACROS PER CUP: 136 cal, 11g F, 8g C, 11g P
Ingredients
-
8 cups popcorn (popped)*
-
3/4 cup salted peanuts
-
3 scoops IHM Vanilla Creme protein powder
-
1/2 cup Walden Farms caramel sauce*
-
Wax paper & cooking spray
Directions
- In a very large bowl, stir protein powder into caramel sauce.
- Add popcorn and peanuts then stir very well to coat everything. Tossing it around with clean hands tends to work best.
- Lay a piece of parchment or wax paper down on a sheet and lightly spray with cooking spray. Add popcorn in a single layer. Lightly spray the top of the popcorn to prevent sticking.
- Place in the freezer for about 30 minutes, taking it out about every 10 to stir the popcorn. While the popcorn doesn’t stick too bad, tossing it around will help prevent sticking as it hardens.
Tastes best right out of the freezer, which is how I recommend storing it.
Popcorn: SkinnyPop was used here. If popping your own, make sure to remove all the extra kernels. They’re not fun to bite into.
Caramel sauce: You can find Walden Farms Caramel at Harmons, some Walmarts, or order online.
Peanut: These add extra crunch, saltiness, and some satiating fat, but you can leave them out and save 60 cal per serving if preferred.
