Sheet Pan Protein Bowls

Need to get a no-fuss dinner on the table? I got you. This one-and-done meal is easy to prepare and on the table in about 30 minutes. We’re pairing apple chicken sausage links with winter vegetables and topping it off with a divine maple Dijon glaze. Once you try this meal, you’ll be hooked. Best of all, you can prepare it two ways: Either on a sheet pan in the oven or inside your air fryer! Double or triple the ingredients to feed the whole family or make meal prep for the week.

Makes two (2) servings

Ingredients:

·       8 ounces potatoes (we used red and Yukon gold)

·       8 ounces brussels sprouts

·       2 Chicken & Apple sausage links (We used Aidells)

·       2 tbsp sugar-free maple syrup

·       1 tbsp Dijon mustard

·       1 tbsp soy sauce (or tamari if GF)

·       1 tsp water

·       Pepper to taste

·       Cooking spray

 

Directions:

  1. Preheat oven to 425 degrees (or the air fryer to 400 degrees).

  2. Wash and slice potatoes and brussels sprouts into bite-size pieces. Cut sausage into coins.

  3. Spray a sheet pan (or your air fryer basket) with cooking spray, then add potatoes, brussels sprouts, and sausage. Spray again generously to coat everything, then season with pepper.

  4. Bake for 20 minutes in the oven (or 12 to 15 minutes in the air fryer).

  5. While it bakes, whisk together Dijon mustard, soy sauce, maple syrup, and water in a small bowl.

  6. Flip the sausage and veggies (or shake them in your air fryer basket), then evenly brush everything with maple Dijon glaze.

  7. Bake for another 7 to 10 minutes in the oven (or 5-7 minutes in the air fryer).

  8. Serve and enjoy!
