Nutty Apple Baked Oatmeal Cups

If you’re an oatmeal lover, you’ve got to try these! These Nutty Apple Baked Oatmeal Cups are a portable meal that you can prep once and enjoy all week. The combination of crisp apples, nut butter, and oats makes the perfect breakfast or pre-workout fuel. You can enjoy these hot or cold and you can even freeze them for future use. Macros per muffin: 169 cal | 7g F| 18g C | 10g P

Dry ingredients

  • 2 cups old fashioned oats

  • 2 scoops IHM Vanilla Cream protein powder

  • ¾ cup grated or diced apple (~1 medium apple)

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Pinch of salt

Wet ingredients

  • ¾ cup unsweetened almond milk

  • ½ cup peanut butter or almond butter*

  • ½ cup applesauce

  • ½ cup liquid egg whites

  • ¼ cup sugar-free maple syrup

 

Directions:

  1. Preheat oven to 350 degrees and line a muffin tin with 10liners.

  2. Spray liner crevices with cooking spray.

  3. Whisk together wet and dry ingredients in separate bowls, then fold them into each other.

  4. Distribute batter between muffin cups and bake for 25 minutes until the tops are golden brown.

Enjoy on their own or topped with 1tsp nut butter drizzle!

Storage:

Store muffins in an airtight container in the fridge for up to 7 days. You can enjoy them cold or hot (microwaved for 45seconds). Muffins can also be frozen for future use.

*Note: Feel free to use any nut butter you have on hand. Do not sub PB2 in this recipe since nut butter is the only fat source that helps to keep the muffins tender.
